- 1/2 cup desiccated coconut
- 3/4 cup rolled oats
- 2 tbsp rice malt syrup
- 1 tbsp coconut oil liquefied
- 1/2 tsp peppermint extract
- 2 tbsp desiccated coconut or Christmas sprinkles to decorate
Ingredients

- Blitz coconut and oats until fine and crumbly.
- Add rice malt syrup, coconut oil and peppermint extract and blitz until well combined.
- Roll into balls and then roll in coconut or sprinkles.
- Place in the fridge or freezer to set.
- Can be stored in the fridge or freezer in an airtight container.
