- cooking oil spray
- 1/2 cup coconut oil, melted (120 mls)
- 1/2 cup coconut sugar (100 grams)
- 2 free-range eggs (100 grams)
- 3 very ripe small banana, mashed (270 grams)
- 1 & 1/2 cups plain wholemeal flour (180 grams)
- 1 tsp baking powder (2.5 grams)
- 1/2 tsp salt (0.5 grams)
- 1 tsp vanilla extract (5 mls)

- Preheat oven to 180C. Lightly spray a loaf pan with cooking oil.
- Place coconut oil and sugar in bowl of a mixer. Add eggs and mashed bananas, mix until well combined.
- Mix flour, baking powder and salt in small bowl then add to banana mixture, mix and then add vanilla while mixing, until well combined.
- Batter will be thick. Pour into prepared loaf pan and bake for 60 minutes or until a skewer comes out clean.
- Slice into 12 pieces. 1 slice is 1 serve. Store leftovers in an airtight container in the fridge for 3-4 days or freeze individually wrapped slices to defrost as required.
