  • 1/2 cup coconut oil, melted (120 mls)
  • 1/2 cup coconut sugar (100 grams)
  • 2 free-range eggs (100 grams)
  • 3 very ripe small banana, mashed (270 grams)
  • 1 & 1/2 cups plain wholemeal flour (180 grams)
  • 1 tsp baking powder (2.5 grams)
  • 1/2 tsp salt (0.5 grams)
  • 1 tsp vanilla extract (5 mls)

Instructions
  1. Preheat oven to 180C. Lightly spray a loaf pan with cooking oil.
  2. Place coconut oil and sugar in bowl of a mixer. Add eggs and mashed bananas, mix until well combined.
  3. Mix flour, baking powder and salt in small bowl then add to banana mixture, mix and then add vanilla while mixing, until well combined.
  4. Batter will be thick. Pour into prepared loaf pan and bake for 60 minutes or until a skewer comes out clean.
  5. Slice into 12 pieces. 1 slice is 1 serve. Store leftovers in an airtight container in the fridge for 3-4 days or freeze individually wrapped slices to defrost as required.
