Chocolate Coconut Blueberry Bites

- 1/2 cup raw cashews
- 2 tablespoons desiccated coconut
- 1/2 cup frozen blueberries
- 1 tablespoon honey
- 1 tablespoon coconut oil
- 1/2 teaspoon vanilla extract
- 160 g dark chocolate 70% cacao
Ingredients

- Soak cashews in cold water for at least an hour, then drain.
- Blitz cashews and coconut until broken down completely.
- Add blueberries, honey, coconut oil and vanilla and blitz until well combined and smooth in texture.
- Press mixture firmly into silicon moulds or into a lined baking tray if you don’t have silicon moulds.
- Pop in the freezer to set.
- Once set, melt chocolate using your preferred method.
- Dip blueberry pieces into chocolate and place on a tray lined with baking paper.
- Pop back into the freezer to set then enjoy.
- Keep stored in the freezer.
