No Bake Double Chocolate Peanut Butter Cookies

Ingredients
  • 1/2 cup pitted dates
  • 1 cup rolled oats
  • 2 tbsp peanut butter
  • 2 tsp pure maple syrup
  • 1/2 tsp vanilla extract
  • 1 tbsp cacao
  • 2 squares dark chocolate at least 70% cacao

  • 1/2 cup pitted dates
  • 1 cup rolled oats
  • 2 tbsp peanut butter
  • 2 tsp pure maple syrup
  • 1/2 tsp vanilla extract
  • 1 tbsp cacao
  • 2 squares dark chocolate at least 70% cacao
Double Chocolate Peanut Butter Cookies
Instructions
  1. Line a tray with baking paper and set aside.
  2. Soak dates in boiling water for 15 minutes, then drain.
  3. Quickly blitz the oats for about 3 seconds.
  4. Add dates, peanut butter, maple syrup, vanilla extract and cacao and blitz until combined.
  5. Press into a cookie shape and place on lined tray.
  6. Pop in the fridge or freezer to set.
  7. Once set, melt chocolate using your preferred method and drizzle over the top of the cookies to decorate.
  8. Keep stored in the fridge or freezer in an airtight container.
