No Bake Double Chocolate Peanut Butter Cookies

- 1/2 cup pitted dates
- 1 cup rolled oats
- 2 tbsp peanut butter
- 2 tsp pure maple syrup
- 1/2 tsp vanilla extract
- 1 tbsp cacao
- 2 squares dark chocolate at least 70% cacao
Ingredients

- Line a tray with baking paper and set aside.
- Soak dates in boiling water for 15 minutes, then drain.
- Quickly blitz the oats for about 3 seconds.
- Add dates, peanut butter, maple syrup, vanilla extract and cacao and blitz until combined.
- Press into a cookie shape and place on lined tray.
- Pop in the fridge or freezer to set.
- Once set, melt chocolate using your preferred method and drizzle over the top of the cookies to decorate.
- Keep stored in the fridge or freezer in an airtight container.
