  • quinoa
  • 45 g uncooked quinoa
  • cup ½water
  • 1 tsp vanilla extract
  • 2 tbsp natural yoghurt
  • 2 tbsp maple syrup
  • Mint layer
  • 1 tsp matcha green tea powder
  • A few sprigs of fresh mint can use peppermint extract
  • Choc Layer
  • 1 tsp cacao
  • 1 tsp Choc Healthy Mummy Smoothie Mix can sub for vanilla
  • Crumble Layer
  • 1 tbsp rolled oats
  • 1 tbsp almond meal can replace with oats to make nut free
  • 1 tbsp dark choc bits
  • 1 tsp honey

Instructions
  1. rinse your quinoa in a sifter under water for a good five minutes
  2. Once rinsed place all the quinoa ingredients, except yoghurt in a saucepan, bring to the boil. Turn down the heat and cover with a lid so it simmers. Will take 10minutes to cook, fluff up with a fork once ready. Put in a container and set aside to cool.
  3. Once cooled split the mixture in two, in the first part mix the quinoa with the mint layer ingredients and mix the other part with the chocolate layer ingredients, put in the fridge.
  4. In a food processor blend the crumble layer ingredients together until a crumb forms. Once cooled mix through the yoghurt and split into two parts
  5. Layer in a bowl or jar first the chocolate layer, then mint layer and then the crumble layer. Eat straight away or can keep for 2-3 days in the fridge
