Soak dates in 3/4 cup boiling water for 5 minutes.
Place dates including water into food processor with cacao, rolled oats and maple syrup.
Blitz on high for 5-10 seconds until combined.
Press base mix down firmly into lined slice tray and set aside.
Soak dates in half a cup of boiling water for 5 minutes.
Place dates including water into food processor add, cashews, salt and vanilla protein.
Blitz on high until a smooth paste forms.
Spread caramel evenly over base.
Melt chocolate in a small microwave safe dish in the microwave, stirring every 20 seconds until smooth.
Drizzle chocolate over top of caramel.
Place into refrigerator allowing it to set for 2-3 hours before slicing.
Once set slice into 12 serves, store in an airtight container for up to 7 days or in the freezer for up to 3 months.
