Base
  • 1/4 cup cacao
  • 1.3 cups rolled oats
  • 1/3 cup dates
  • 3/4 cup boiling water
  • 1/2 cup desiccated coconut
  • 1 tbsp maple syrup
Caramel
  • 1.5 cup cashews
  • 1/3 cup dates
  • 1/2 cup boiling water
  • 1 scoop The Healthy Mummy Vanilla Whey protein optional
  • 1/2 tsp rock salt
Top
  • 60 grams dark cooking chocolate 70%

Instructions
Base
  1. Soak dates in 3/4 cup boiling water for 5 minutes.
  2. Place dates including water into food processor with cacao, rolled oats and maple syrup.
  3. Blitz on high for 5-10 seconds until combined.
  4. Press base mix down firmly into lined slice tray and set aside.
Caramel
  1. Soak dates in half a cup of boiling water for 5 minutes.
  2. Place dates including water into food processor add, cashews, salt and vanilla protein.
  3. Blitz on high until a smooth paste forms.
  4. Spread caramel evenly over base.
Top
  1. Melt chocolate in a small microwave safe dish in the microwave, stirring every 20 seconds until smooth.
  2. Drizzle chocolate over top of caramel.
  3. Place into refrigerator allowing it to set for 2-3 hours before slicing.
  4. Once set slice into 12 serves, store in an airtight container for up to 7 days or in the freezer for up to 3 months.
