In this recipe we combine creamy, reduced fat Greek yoghurt with dates, coconut, vanilla and cranberries for a festive themed healthy dessert.

Ingredients
  • 1 tbsp raisins
  • 1 tbsp dried cranberries
  • 1 tsp cinnamon
  • 4 medjool dates pitted
  • 2 bananas
  • 2 cups reduced-fat Greek yoghurt
  • 2 tsp vanilla extract
  • 1 tbsp shredded coconut

  • 1 tbsp raisins
  • 1 tbsp dried cranberries
  • 1 tsp cinnamon
  • 4 medjool dates pitted
  • 2 bananas
  • 2 cups reduced-fat Greek yoghurt
  • 2 tsp vanilla extract
  • 1 tbsp shredded coconut
Easy Plum Pudding Ice Cream
Instructions
  1. Place all ingredients (excluding the shredded coconut) into a blender or food processor and blitz until well combined.
  2. Place in a freezer proof container and freeze for approximately 3 hours or until firm.
  3. When ready to eat, remove from freezer and allow to soften slightly for 15 minutes. Serve topped with shredded coconut.
