210 Calorie Plum Pudding Ice Cream
Looking for an Aussie take on the traditional Plum Pudding? How about this easy Plum Pudding Ice Cream? All the delicious taste but in fresh, ice cream form. And did we mention that it gets the ‘healthy food’ tick as well at just 210 calories per serve?
In this recipe we combine creamy, reduced fat Greek yoghurt with dates, coconut, vanilla and cranberries for a festive themed healthy dessert.

- 1 tbsp raisins
- 1 tbsp dried cranberries
- 1 tsp cinnamon
- 4 medjool dates pitted
- 2 bananas
- 2 cups reduced-fat Greek yoghurt
- 2 tsp vanilla extract
- 1 tbsp shredded coconut
Ingredients

- Place all ingredients (excluding the shredded coconut) into a blender or food processor and blitz until well combined.
- Place in a freezer proof container and freeze for approximately 3 hours or until firm.
- When ready to eat, remove from freezer and allow to soften slightly for 15 minutes. Serve topped with shredded coconut.
Recipe makes 4 serves with 210 calories per serve.
