Strawberries and Cream Overnight Weetbix
Here is another delicious and healthy breakfast option direct from the Healthy Mummy. The Overnight Weetbix trend has been super popular in the Healthy Mummy community, allowing mums to get a healthy breakfast together the night before, to make those hectic mid week mornings just a little easier.
This recipe is super simple and uses just 5 ingredients. Weetbix are crushed with milk of your choice and topped with high protein yoghurt, crushed strawberries and chia seeds. Not only does it taste great, it’s only 304 calories per serve making it a healthy yet filling breakfast option if you are on a weight loss journey.

- 2 weetbix
- 1/4 cup milk of choice
- 100 grams yopro vanilla yoghurt
- 1/2 cup strawberries sliced
- 1 tsp chia seeds
Ingredients

- Make your “strawberry jam” by heating half of the strawberries with a dash of water if you’re using fresh produce until they begin to soften, then mash with a fork.
- Stir through chia seeds and set aside to thicken and cool.
- Crush weetbix into a container, add milk and stir well. Pat the weetbix mixture down firmly to create the base.
- Pour “strawberry jam” into your container to cover the weetbix, then pour in the yoghurt to cover the “strawberry jam.”
- Top yoghurt with the remaining strawberries to garnish.
- Set in the fridge or consume immediately.
