- 1/2 cup rolled oats
- 1/2 cup raw cashews unsalted
- 1/2 cup coconut desiccated or shredded
- 2 tbsp pepitas
- 1 tsp vanilla extract
- 2 tsp water
- 2 tbsp rice malt syrup
- 2 tbsp dried cranberries
Ingredients

- Blitz oats, cashews, coconut and pepitas for 15-20 seconds.
- Add remaining ingredients and blitz until just combined. Don’t over blitz.
- Press into mini silicone moulds, pattie cases or a tray lined with baking paper and place in the fridge to set.
- Once set, pop them out of the moulds or cut into pieces if using a tray.
- Keep stored in the fridge or freezer in an airtight container.
