Being a mum means you are constantly on the go, and Julie Durbhakula says she’s found herself too tired to whip up a meal on many occasions!

“I know it is a bit of a cliché but sometimes it really does feel like you are working 24 hours a day,” she says.

“You have little people that rely on your tending to their needs day and night, then there’s housework and for quite a few of us mums an outside job too – who on earth has energy to cook?!”

“I know I certainly have days when I just feel too tired to cook and previously these would have been the times I would reach for those takeaway menus or jump in the car and grab drive-thru,” says Julie.

“BUT it is possible to create healthy meals with very minimal effort, so when you are feeling too tired or just cant be bothered.

“Quick and easy dinners, definitely don’t have to be boring!”

Julie’s 9 easy meals to make when you’re tired:

1. Tuna Sushi Bowls

This meal is so quick and easy. A little tip is use the pre-packaged microwave rice packets to make it even quicker.

2. Curry Flavoured Noodles

Another meal that is ready in less than 10 minutes and very versatile with using whatever veggies you have available.

3. Rosemary and Lemon Chicken Tray Bake

Throw everything in a tray and then into the oven! It doesn’t get much easier than this!

4. Mexican Zuchinni Boats

Anything that takes less than 15 minutes is great in my opinion and when it tastes as good as this recipe does, you’re on to a winner.

5. The Asian Beef and Greens Stir fry

This meal is literally done in 10 minutes from start to finish and it is delicious!

6.Mexican Mince used as either tacos or nachos

I cook up a batch of the mince from the Mexican Lasagne recipe and use it for tacos or nachos, it only takes around 10 minutes for the mince to cook and then dinner is served!

7. Fish with Leek & Cannellini Bean Puree

Cannellini puree is super creamy and high in fibre so makes a great side dish for a healthy meal. You must try this one, so very tasty and quick to prepare.

8 . Cheesy Rocket Scramble

Breakfast for dinner, yes its a thing! And you’ll have dinner on the table in a matter of minutes.

9. Porcupine Meatballs

If I know its going to be a particularly hectic day, I pre-pare and have dinner in the slow cooker ready for when I get home and the Porcupine Meatballs are perfect for this.

Julie’s 15kg weight loss story
