Healthy Mummy community member Ash Petroff has made a healthy version of the traditional dessert, which is ideal for when you are following the 28 Day Weight Loss Challenge.

wateronly a small amount needed if the mix is crumbly
Ingredients for the apple mixture
3green applesfinely diced
2tbspcoconut oilmelted
1tbspcorn flourmixed with a little water to make a runny paste
cinnamonas much or as little as you like
Ingredients for the crumble topping
1/2 cuprolled oats
2tbspalmond meal
2tbspdesiccated coconut
1tbsppure maple syrup
1tbspcoconut oilmelted

Instructions
For the Base
Mix all ingredients for the base in a food processor, only add water if the base mix is too crumbly to bring the mix together.
Once well combined, in a loaf tin lined with baking paper, pour in the base ingredients and flatten down firmly with your hand.
Put in the freezer to set, and move on to the next step
For the apple layer
In a small pot, put all the ingredients except the cornflour mix, on a low/medium heat and soften the apples. Takes around 20 min.
Once the apples have softened add the cornflour mix and stir to thicken.
Once it has thickened, place the apple mix over the base.
Let it cool slightly before setting in the fridge.
For the topping
Add the topping ingredients to a food processor and blend together. You don't want to completely grind up the topping, you still want it a little textured.
Once combined, pour over the apple layer and press down to pack it on.
Once the topping is on, set in the freezer for 1-2 hours.
Once set cut into 10 pieces, one piece is one serve
