This recipe for choc caramel volcano cookies is AMAZING and you will be very happy to know that it’s no where near as many calories as it looks. If you’re trying to lose weight and are following the 28 Day Weight Loss Challenge, these cookies are the perfect indulgence!

- 12 pitted dates
- ¼ cup coconut cream
- ¼ cup water

- Preheat oven to 190 degrees, prep a flat baking tray with baking paper. Or you can use a muffins tin to cook the cookies in.
- Mix all the ingredients for the choc cookies in a bowl, mix with your hands to ensure it is mixed well and comes together to form a dough.
- Roll into 12 balls and put onto your baking tray or muffin tin, then press slightly down with your thumb to flatten slightly.
- Bake for 10-15 min.
- Once ready, let them cool on the tray then transfer to a wire rack.
- Put the pitted dates and water in a small saucepan on medium heat.
- Bring to the boil to soften dates, once the water starts to evaporate add the coconut cream.
- Stir the mix every couple of minutes, if getting too hot turn down the heat.
- Once it's slightly thickened, take off the heat and blitz in a food processor to form a thick caramel icing to spread over your cookies.
