Ingredients for choc cookies
  • 2 cups wholemeal self raising flour
  • ½ cup cacao
  • ½ cup pure maple syrup
  • ½ cup coconut oil not solid but not completely melted, just soft
  • 1 egg

  • 1 cup pitted dried dates
  • ¼ cup coconut cream
  • ¼ cup water

Instructions
  1. Preheat oven to 190 degrees, line baking tray with baking paper. Or you can use a muffins tin to cook the cookies in.
  2. Mix all the ingredients for the choc cookies in a bowl, mix with your hands to ensure it is mixed well and comes together to form a dough.
  3. Roll into 12 balls and put onto your baking tray or muffin tin, then press slightly down with your thumb to flatten slightly.
  4. Bake for 10-15 min.
  5. Once ready, let them cool on the tray then transfer to a wire rack.
  6. Make the icing by placing the pitted dates and water in a small saucepan on medium heat.
  7. Bring to the boil to soften dates, once the water starts to evaporate add the coconut cream.
  8. Reduce to a simmer and stir the mix every couple of minutes.
  9. Once it's slightly thickened, take off the heat and blitz in a food processor to form a thick caramel icing to spread over your cookies.
