Easy Chorizo and Sweet Potato Rice Salad
You can’t beat a super easy 5 ingredient recipe for a quick and fuss-free lunch or dinner option.
And when it tastes as good as this chorizo and sweet potato rice salad, it’s safe to say that you’ll be putting this recipe on your meal plan regularly.

- 1 cup brown rice
- 100 g chorizo diced
- 800 g sweet potato cubed
- 2 cups baby spinach chopped
- 1 tbsp olive oil
- Salt and pepper
Ingredients

- Preheat oven to 180C.
- Cook rice per packet instructions.
- Toss sweet potato in olive oil and season with salt and pepper.
- Roast sweet potato in oven for 20 minutes.
- Heat fry pan on medium heat and sauté chorizo until browned.
- Place roasted sweet potato, spinach, cooked chorizo and spinach into large mixing bowl, toss until combined.
- Serve and enjoy.
Store in air tight container in refrigerator for up to 4 days.
Makes 4 serves at 360 calories per serve.
