  • 3/4 cup roasted cashews
  • 1/2 cup rolled oats
  • 1/4 cup coconut flour
  • 1/2 cup pitted dates
  • 1/2 tsp ground ginger
  • 1/2 cup boiling water

  • 3/4 cup roasted cashews
  • 1/2 cup rolled oats
  • 1/4 cup coconut flour
  • 1/2 cup pitted dates
  • 1/2 tsp ground ginger
  • 1/2 cup boiling water

Instructions
  1. In a small bowl soak pitted dates and cashews in boiling water for 10 minutes.
  2. Place soaked dates and cashews including water into food processor.
  3. Add remaining ingredients and blitz on high until combined.
  4. Roll into 14 balls.
  5. Keep refrigerated in an air tight container for up to 7 days or in the freezer for up to 3 months.
