Greens never tasted so good!! This incredibly versatile salad recipe from the 28 Day Weight Loss Challenge can be eaten on its own as a tasty and crunchy side salad, or even as a chunky dip with tortilla chips. It also makes a great addition to a healthy wrap or taco’s with some lean protein like chicken or fish.
Plus it is nutrient dense and extremely flavoursome. Crunchy, vibrant and tasty, this is definitely a recipe you’ll want to save in your salad repertoire!
Finely dice your salad ingredients (cabbage, cucumber, chives and spring onions) small enough you can have it on a cracker or carrot stick.
Place into a bowl together and mix well.
In a food processor mix the remaining ingredients to make your salad dressing.
Blend this well until a dressing is formed.
Mix your dressing on top of your salad.
Stir everything together until well combined.
