Vibrant Green Goddess Salad

Greens never tasted so good!! This incredibly versatile salad recipe from the 28 Day Weight Loss Challenge can be eaten on its own as a tasty and crunchy side salad, or even as a chunky dip with tortilla chips. It also makes a great addition to a healthy wrap or taco’s with some lean protein like chicken or fish.

  • 1/2 head white cabbage finely chopped
  • 4 Lebanese cucumber finely diced
  • 1 tbsp fresh chives finely sliced
  • 5 spring onion finely sliced
  • 2 lemons juiced
  • 1/4 cup extra virgin oil
  • 2 tbsp apple cider vinegar
  • 2 cloves garlic
  • 1/4 cup cashew nuts unsalted
  • 4 tbsp fresh basil leaves torn
  • 1 cup baby spinach
  • 1 cup Nutritional Yeast
  • t tsp salt

Instructions
  1. Finely dice your salad ingredients (cabbage, cucumber, chives and spring onions) small enough you can have it on a cracker or carrot stick.
  2. Place into a bowl together and mix well.
  3. In a food processor mix the remaining ingredients to make your salad dressing.
  4. Blend this well until a dressing is formed.
  5. Mix your dressing on top of your salad.
  6. Stir everything together until well combined.
