These super easy Fried Rice Fritters from the 28 Day Weight Loss Challenge make for a quick and healthy family friendly meal or snack. Using pre-cooked brown rice, all the ingredients go in together and take just 5 minutes to cook.

These are great to prep and cook in advance so you have healthy snacks on hand, plus make an excellent addition to lunch boxes packing extra veggies into the kids day.  They’ll suit the whole family, even the fussiest of little eaters!

  • 250 grams microwavable brown rice
  • 1 cup frozen peas
  • 3 spring onions
  • 1/2 cup reduced-fat cheddar cheese shredded
  • 3 free-range eggs
  • 1/3 cup wholemeal flour
  • 3 tbsp soy sauce salt reduced
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 100 grams ham off the bone diced
  • 1/2 cup corn kernals fresh or tinned
  • 1 medium carrot grated
  • cooking oil spray

Instructions
  1. Combine all ingredients together in a large bowl.
  2. Heat a frying pan over medium heat and spray with cooking oil.
  3. Using a tablespoon, take large scoops of the mix and place in the frying pan to make patties.
  4. Cook patties for 3-5 minutes turning once during cooking.
  5. This recipe makes 18 patties, serve 2 patties per serve.
