Take Away Style Lamb And Potato Pizza

Ingredients
- 1/2 potato sliced
- 50 grams lean lamb mince
- 1 medium wholemeal pita bread
- 1 tbsp tomato passata
- 2 tbsp frozen peas
- 1/2 cup baby spinach
- 1 tbsp reduced fat feta
- 1 tbsp grated Parmesan
- 1 cup mixed lettuce leaves
- 1 tbsp lemon juice

Instructions
- Steam potato slices in the microwave or on the stovetop until tender.
- While potato is cooking, brown off the lamb mince in frypan until cooked through. Drain any fat off and stir spinach through the mince to wilt.
- Preheat oven to 180C and line a tray with baking paper.
- Spread the pita bread with tomato passata and top with potato slices, lamb and spinach mixture and peas. Crumble feta over the top and scatter over grated Parmesan.
- Place pizza in the oven for 10-12 minutes until heated through and cheese has melted.
- Serve with mixed lettuce leaves dressed with lemon juice.
