Pesto crusted lamb with potatoes and greens

Lamb, pesto, potatoes and greens are such a delicious combination – and perfect for the cooler weather.

We love dinners like this that can be thrown together in half an hour. This recipe comes from 28 Day Weight Loss Challenge member Cassie Wight.

Lamb and vegetables
  • 250 grams lamb backstrap fillet
  • 1 bunch broccolini
  • 1 bunch asparagus
  • 1 tbsp extra virgin olive oil
  • 1 large potato sliced
Pesto
  • 1 tbsp Parmesan cheese
  • 1/2 tbsp extra virgin olive oil
  • 1/2 bunch fresh basil
  • 2 tbsp pinenuts
  • 1/2 tsp crushed garlic
  • Salt and pepper

  • 1 tbsp Parmesan cheese
  • 1/2 tbsp extra virgin olive oil
  • 1/2 bunch fresh basil
  • 2 tbsp pinenuts
  • 1/2 tsp crushed garlic
  • Salt and pepper
Pesto Lamb
Instructions
  1. Preheat oven to 220C.
  2. Place all pesto ingredients into food processor and blitz for 1 minute until paste forms.
  3. Place sliced potato into microwave safe dish, microwave on high for 1 minute.
  4. Toss potato slices in ½ tbsp olive oil.
  5. Place potatoes on lined baking tray and bake for 10 minutes.
  6. Heat fry pan with remaining ½ tbsp. olive oil and sear lamb on both sides.
  7. Remove tray from oven with potatoes and place lamb on tray with potatoes brushing both sides of the lamb with pesto.
  8. Return tray back to oven for 5-10 minutes, 5 minutes for med/rare, 10 minutes for med/well lamb.
  9. Steam vegetables while lamb is in the oven.
  10. Slice cooked lamb and serve with steamed greens and potatoes.
