Ingredients
- 1 brown onion
- 2 tsp coconut oil
- 280 g frozen spinach
- 1.25 cups wholemeal breadcrumbs
- 2.5 tsp dried Italian herbs
- 3 free-range eggs
- 2 tbsp grated Parmesan
- Salt and pepper
- Lemon wedges to serve

Instructions
- Preheat oven to 180C. Defrost the spinach, drain off excess water and chop up.
- Finely dice onion and sauté with the coconut oil in a small frying pan until softened.
- Place onion and all other ingredients in a bowl and mix until well combined. Season with salt and pepper.
- Roll mixture into approximately 20 bite-sized balls. Place on a lined baking tray and bake for 20 minutes. Serve with a wedge of lemon. 5 balls is 1 serve.
