5 Ingredient Strawberry & Coconut Ice Cream
There is something special about real fruit strawberry ice cream. And this recipe is particularly special as it is easy to make at home and totally guilt free. Perfect if you trying to lose baby weight or follow our 28 Day Weight Loss Challenge.
There are no numbers, no artificial additives, no gums, no emulsifiers, no preservatives and minimal processing – unlike most store bought brands.

- 400 g light coconut cream canned
- 1 banana
- 2 cups strawberries hulled or you could frozen strawberries
- 2 large tbsp Greek yoghurt
- 2 tbsp honey or alternative sugar replacement

- Blend all the ingredients together and then freeze in little ice cube trays. By putting them in ice cubes it is less difficult to break down post freeze.
- After a minimum of 2 hours, place the ice cubes back into the blender and blend until at desired consistency.
- Serve in a bowl sprinkled with fresh strawberries and a sprig of mint.
Serves 4 people at 190 calories per serve
