Thai Style Sausage Rolls

Ingredients
- 3 sheets puff pastry reduced fat
- 500 g chicken mince
- 150 g fresh coleslaw mix no dressing
- 2 tbsp sweet chilli sauce
- 6 slices wholemeal bread turned into breadcrumbs
- 1 tbsp coconut sugar
- 1 cup baby spinach
- 1 brown onion large, diced
- 1 tbsp mixed herbs
- 1/4 cup coriander leaves
- Salt and pepper to taste
- 2 eggs

Instructions
Defrost puff pastry on bench then cut each in half length ways
In food processor place onion, coleslaw, herbs, salt, pepper, baby spinach, sugar, coriander and blend until finely chopped.
Empty into a bowl then add mince, crumbs, egg and sweet chilli and mix through by hand using gloves.
Place your 6 puff pastry sheets in front of you.
Use a piping bag or spoon to place the mix length ways down one half of each puff pastry strip like a sausage shape.
Once done roll each one over tightly in to a roll and seal edge with a little skim milk.
Then cut each length in half so you have 12 rolls in total.
Brush the tops with some milk to help the pastry brown nicely.
Place in 180C oven on greased/lined tray for approx 20mins or until golden brown and cooked through.
