Healthy Mummy Team make 200 meals to give to mums with sick children

While donating money to your local charity is an extremely generous thing to do, this incredible mama teamed up with The Healthy Mummy to go one step further to make a batch of healthy meals from the 28 Day Weight Loss Challenge.

The Healthy Mummy footed the bill and awesome mum Ashleigh Dunkley cooked all day to meal prep and cook all the food to give to charity  Access Outreach Australia – which helps the homeless, other women and pensioners.

She made 200 meals costing around $3 per serve.

“It’s easy to forget that there are people who are less fortunate than yourself, and while money does go a long way, food safety and nutrition is also important too,” she says. “It works out each serve cost around $3.”

The mum-of-two reveals she chose Access, as she wanted to find a charity that was active in her local community and one that helped other mothers too.

“Access Outreach Australia are going to donate the meals to the homeless, mothers in need (mothers who have sick children in hospital) and pensioners,” she says.

“I actually loved the experience so much that I am going to do it more. Access have weekly ‘adopt a pensioner’ events and you can come and cook, or deliver, or just socialise with them each week.

“I am thankful to The Healthy Mummy for helping me open my eyes.”

Ashleigh reveals she preps every week and has been a 28 Day Weight Loss Challenge member for three years, losing 12.5kg TWICE in this time.

“For me, meal prep saves time later. It ensures that I am sticking to my meal plan, because it’s so easy to just open the fridge and grab my snacks. It stops me overeating, or getting too hungry,” she says.

“It means that my kids are eating healthy, home cooked snacks instead of packaged food with loads of preservatives. It also teaches my kids about healthy food as I get them involved in the kitchen.

“It also cuts down on my bill as I use EVERYTHING. All the old veggies in my veggie drawer go into slow cooker meals, all the fruit gets portioned out and bought according to my meal plan, I don’t end up with extras at the end of the week so nothing is wasted.”

Get the family involved with meal prep to get them interested in the food they are eating and learn more about it with you. This recipe requires lots of grating – something older children may be able to help you with.

Ashleigh’s success with the 28 Day Weight Loss Challenge

HOT BOD TRANSFORMATION: Mum Now Has A Bod She Is 'Damn Proud Of'

Ashleigh has lost 12.5kg* TWICE by following the 28 Day Weight Loss Challenge.

Ashleigh began her journey in 2013 after the birth of her son. She lost 12.5kgs and then had a healthy second pregnancy with The Healthy Mummy. Following the birth of baby number two, she lost 12.5kg once more.

Ashleigh says she now has a body she is SUPER ‘proud of!’ – which is absolutely amazing!

“This body grew two beautiful babies! However, it wasn’t looked after, it wasn’t treated well, it wasn’t loved,” she admits.

“Now it is strong. Now it is healthy. Now it is a little wobbly but still awesome!

“HELL YEAH I am a Healthy Mummy!,” says Ashleigh! 

Way to go Ash! You look absolutely unreal. You ought to be so proud of your achievements, determination and transformation.

The Healthy Mummy exists to empower mums to take charge of their health and support other mums do the same.
