8 HEALTHY Chicken Parmigiana toppings the whole family will love
Who doesn’t love Chicken Parmigiana?! It is such a good old classic pub meal and definitely one we encourage you to enjoy on the 28 Day Weight Loss Challenge.
Why not mix it up with these healthy toppings for something a little bit different.
A traditional parmigiana topping includes ham (or bacon), tomato sauce and cheese. But there are so many other ways you can mix it up and still enjoy a healthy dinner.
HEALTHY Chicken Parmigiana toppings
Plain Chicken schnitzel
A plain Healthy Mummy Chicken Schnitzel (chicken breast with wholemeal breadcrumbs and parmesan cheese) which can be found on the 28 Day Weight Loss Challenge contains 359 calories per serve.
The additional toppings of choice will add to your calorie count. So don’t forget to calculate the plain crumbed chicken at 359 calories PLUS the amount of calories of your preferred topping which includes ham, cheese, tomato and the extra topping.
Traditional topping
A Healthy Mummy Chicken Parmigiana includes wholemeal bread crumbs, 1/4 cup tomato passata and 20g reduced fat mozzarella.
439 total calories per serve (including crumbed schnitzel).
Jalapenos or chilli
Add 2 tsp Jalapenos to your traditional topping (Mild chilli or capsicum if you prefer something with less spice). They are also a rich source of vitamin C and antioxidants.

Olives
1/4 cup Kalamata olives are also delicious to add to your topping, plus they are full of Vitamin E.

Pineapple
Ham and pineapple are a classic combination. Pineapple is also naturally high in fibre and a good source of Vitamin A and C.
Add 1/4 cup pineapple to your topping for an extra 150 calories.
Chorizo
While it might be a sometimes food, adding 25g of chorizo to your parmi topping makes a great addition if you are looking for something a little bit more spicy.

Add 1 tsp chilli flakes, 1/4 red capsicum and 25g corn chips for a delicious Nacho style Mexican twist.

Eggplant or Zucchini
Slice some Eggplant or Zucchini and layer under the cheese. 1 cup of eggplant contains just 38 calories. A good source of antioxidants and vitamins A, C, E and K.

Mix up the sauce!
Swap out the tomato-based sauce for some pesto, BBQ sauce or a Healthy salsa mix to switch it up a bit.

1/4 (30g) Avocado is a great healthy topping if you want to keep it simple.
