Ditch the shop bought cakes and try this healthy, homemade blueberry tea cake

Is there anything better than cake fresh out of the oven? Nope – unless of course it’s healthy.

In this quick, one bowl mix-and-bake cake you’ll be sitting down for a cuppa and a slice in no time at all. By ditching the store bought cakes with scary ingredient lists, you’ll still be able to lose weight in a healthy way.

Blueberry Tea Cake
Ditch the shop bought cakes and try this healthy, homemade blueberry tea cake

  • 1 cup wholemeal self raising flour
  • ¼ cup coconut sugar or brown sugar
  • 1 egg
  • 1 tsp vanilla extract or vanilla essence
  • 3 tbsp melted coconut oil
  • ½ cup almond milk
  • ½ cup blueberries

Ditch the shop bought cakes and try this healthy, homemade blueberry tea cake
Instructions
  1. In a bowl mix the melted coconut oil and the coconut sugar together, mix in the egg, vanilla and almond milk into the bowl. Whisk together until well combined.
  2. Add in the flour and continue to mix well, then fold through the blueberries
  3. Put cake batter into a loaf pan (I used a silicone loaf pan)
  4. Bake at 175 degrees until cooked (around 30min)
  5. Let the cake cool before cutting.
