If your family loves the classic spag bol, then they will go nuts for this delicious Budget Family Friendly Bolognese Bake from the 28 Day Weight Loss Challenge.

This is an easy and extremely family friendly meal, great to prepare ahead of time for a quick ‘pop in the oven’ mid week dinner.  Plus it’s really budget friendly at just $2.15 per serve!!

The other great benefit of this recipe compared to other traditional meat based pasta dishes, is that it’s healthy at just 375 calories per serve! Not that the family will notice. By using wholemeal pasta, and hidden veggies (the kids won’t even know they’re there) or by swapping out veggies the family loves, you’re ensuring you’re staying on track with your healthy eating plan, and keeping the family well fed at the same time!

  • 3 1/2 cups wholemeal pasta spirals
  • 3 cloves garlic crushed
  • 1 tbs dried Italian herbs
  • 400 grams lean beef mince
  • 1 brown onion diced
  • 1 medium carrot grated
  • 1 small zucchini grated
  • 800 grams tinned tomatos
  • 4 tbsp tomato paste
  • Salt and pepper
  • 1 1/2 cups reduced-fat mozzarella cheese grated

Instructions
  1. Cook pasta following packet instructions.
  2. Preheat the oven to 200°C and spray two 20cm cake tins with cooking oil spray.
  3. Heat a large frying pan over medium-high heat and add mince, garlic, herbs, onion, carrot and zucchini. Cook for 3-5 minutes or until mince is browned and vegetables are soft.
  4. Add diced tomatoes, tomato paste and season with salt and pepper. Cook for 5-10 minutes or until the sauce starts to reduce.
  5. Add pasta to the frying pan and stir through.
  6. Pour bolognese mix into prepared tins and top evenly with mozzarella cheese.
  7. Bake in the oven for 10-15 minutes or until the cheese is melted and golden.
  8. Divide each tin into 4 serves. Leftovers can be stored in an airtight container for3-4 days.
