This Lentil Recipe is a great vegetarian dish, inspired by a classic Shepherd’s Pie, with lentils taking the place of meat.

Using tinned legumes (like lentils, chickpeas, or kidney beans) ensures meals are still very satisfying without meat. They are a budget-friendly way to add protein to your diet.

  • 800 grams tinned brown lentils
  • 2 cups tomato passata
  • 2 carrots diced
  • 1 cup frozen peas
  • Salt and pepper
  • 2 sweet potato peeled and diced
  • 1/2 cup reduced-fat cheddar cheese grated

Instructions
  1. Preheat the oven to 190C.
  2. Rinse and drain lentils and combine with carrot, peas and tomato passata in a saucepan over medium heat. Season with salt and pepper.
  3. Bring to the boil then reduce to a simmer for 20 minutes. Add a little water if mix thickens too much.
  4. Meanwhile, boil the sweet potato in a saucepan until tender. Drain and mash. Place the lentil mix in an ovenproof dish and top with mashed sweet potato. Sprinkle over grated cheese and bake for 15 minutes or until cheese has melted and is golden.
