Looking for a lunch or dinner that’s both satisfying and kind to your waistline? This 307-calorie Chicken Power Bowl is full of protein and healthy fats that will keep you full, and satiated and will stabilise blood sugar levels for longer, plus the garlic aids liver function which supports hormone detox.

This easy recipe takes just 10 minutes to prep making it perfect for busy weekdays or nights. You could even speed up the process by using meal-prepped cooked chicken, then it’s just a case of pulling it all together.

With asian inspired flavours, this recipe from the 28 Day Weight Loss Challenge  is all about packing a nutritious punch without the guilt. We’re talking lean protein from the chicken thighs to keep you feeling satisfied for hours, lemongrass and garlic to add an aromatic kick that’ll tantalize your taste buds. And did we mention the chili flakes? They bring a touch of heat that might even give your metabolism a little boost! Make it as hot (or as not) as you like.

But wait, there’s more! This bowl is also loaded with a vibrant mix of veggies to keep things interesting and healthy. Shredded purple cabbage adds a beautiful pop of colour and is packed with antioxidants to fight free radicals. The peppery rocket gives a little bite and provides essential folate for healthy cell growth. And for a touch of sweetness and crunch, we’ve got red capsicum, corn, and chopped cashews.

Let’s not forget the creamy, dreamy sauce! With reduced-fat Greek yogurt for protein and healthy fat boost, along with a drizzle of extra virgin olive oil for an extra layer of flavour. Finally, a spoonful of kimchi adds a touch of probiotic goodness for a happy gut. (A healthy gut is a key player in immunity!)

So ditch the boring salads and greasy takeout! This Chicken Power Bowl is the perfect way to fuel your body with deliciousness without breaking the bank (or your calorie goals). Let’s get cooking!
