  • 400 g pitted dates
  • 1 tbsp instant coffee
  • 1 cup wholemeal self raising flour
  • 1/4 cup chopped almonds (you could also use walnuts or Brazil nuts)

Instructions
  1. Chop dates roughly.
  2. Add coffee to 1 ¼ cups boiling water, then pour over the dates to soak for approximately 3 hours.
  3. Stir in sifted flour and chopped nuts. Mix well.
  4. Pour into greased and lined loaf tin. Bake for 30-35 mins at 170C. Loaf is cooked when a skewer comes out clean.
