Ingredients
- 400 g pitted dates
- 1 tbsp instant coffee
- 1 cup wholemeal self raising flour
- 1/4 cup chopped almonds (you could also use walnuts or Brazil nuts)

Instructions
- Chop dates roughly.
- Add coffee to 1 ¼ cups boiling water, then pour over the dates to soak for approximately 3 hours.
- Stir in sifted flour and chopped nuts. Mix well.
- Pour into greased and lined loaf tin. Bake for 30-35 mins at 170C. Loaf is cooked when a skewer comes out clean.
