This zesty potato salad would make a great addition to any festive or summer BBQ.

A lighter version of a traditional potato salad, this is great as a meal on its own or served alongside a main meal.

  • 4 medium potatoes, chopped (480 grams)
  • 1 small sweet potato, chopped (160 grams)
  • 4 spring onion, finely sliced (60 grams)
  • 1/3 cup sun-dried tomatoes, chopped (80 grams)
  • 1/3 cup fresh parsley, chopped (20 grams)
  • 1/3 cup fresh basil leaves, chopped (20 grams)
  • 1/3 cup grated Parmesan (48 grams)
  • 1 tablespoon apple cider vinegar (20 mls)
  • 1 tablespoon lemon zest (16 grams)
  • salt
  • Pepper
  • 1 tablespoon extra virgin olive oil (20 mls)

Instructions
  1. Steam potato and sweet potato on the stovetop or in the microwave until tender. Allow to cool.
  2. Combine potatoes, spring onion, sun-dried tomatoes, parsley, basil and Parmesan in a bowl. Dress with vinegar, oil and lemon zest. Toss to combine.
  3. Season with salt and pepper to serve.
