Festive Potato Salad
This zesty festive potato salad would make a great addition to any festive or summer BBQ.
A lighter version of a traditional potato salad, this is great as a meal on its own or served alongside a main meal.

Ingredients
- 4 medium potatoes, chopped (480 grams)
- 1 small sweet potato, chopped (160 grams)
- 4 spring onion, finely sliced (60 grams)
- 1/3 cup sun-dried tomatoes, chopped (80 grams)
- 1/3 cup fresh parsley, chopped (20 grams)
- 1/3 cup fresh basil leaves, chopped (20 grams)
- 1/3 cup grated Parmesan (48 grams)
- 1 tablespoon apple cider vinegar (20 mls)
- 1 tablespoon lemon zest (16 grams)
- salt
- Pepper
- 1 tablespoon extra virgin olive oil (20 mls)

Instructions
- Steam potato and sweet potato on the stovetop or in the microwave until tender. Allow to cool.
- Combine potatoes, spring onion, sun-dried tomatoes, parsley, basil and Parmesan in a bowl. Dress with vinegar, oil and lemon zest. Toss to combine.
- Season with salt and pepper to serve.
