  • 1 fresh lasagne sheet
  • 1 tbsp extra virgin olive oil
  • 1/4 red onion finely sliced
  • 2 cloves garlic finely diced
  • 1/2 small red chilli sliced
  • 150 grams prawns raw shelled
  • 1 cup rocket lettuce
  • 1/2 bunch chopped fresh basil leaves
  • 1/4 lemon zest & juice

Instructions
  1. Slice the fresh lasagne sheet into strips then place the pasta strips into a pot of boiling water for 5 minutes.
  2. While the pasta is cooking, heat the oil in a frying pan over a medium to high heat.
  3. Add the red onion, garlic and chilli, stir for a few minutes until the onion starts to soften.
  4. Add the prawns and stir for a couple of minutes before adding the rocket and basil.
  5. Drain the pasta strips and take the prawn mix off the heat.
  6. Add the cooked pasta to the frying pan, top with lemon zest and lemon juice.
  7. Toss until well combined, serve warm.
