Sun-Dried Tomato Gnocchi Sticks

For a healthy savoury snack, these Gnocchi Sticks are so easy. Whether you’re snacking at home, or entertaining friends, these sticks make antipasto even more fun.

If you’re trying to reduce the sugar in your diet, it’s a great idea to focus on savoury foods where possible. You can often get olives and sun-dried tomatoes in jars or from the deli without added oil, making them lower in calories.

  • 10 pieces fresh gnocchi
  • 1 tsp extra virgin olive oil
  • 1/2 cup pitted green olives
  • 1/4 cup sun-dried tomatoes
  • 10 leaves fresh basil

  • 1 tsp extra virgin olive oil
  • 1/2 cup pitted green olives
  • 1/4 cup sun-dried tomatoes
  • 10 leaves fresh basil
Sun-Dried Tomato Gnocchi Sticks
Instructions
  1. Preheat oven to 160C.
  2. Place the fresh gnocchi in a baking dish and drizzle with olive oil. Roast for 25-30 minutes or until golden, stirring occasionally.
  3. Thread roasted gnocchi onto the end of 10 large toothpicks or small skewers.
  4. Divide olives, sun-dried tomatoes (cut into pieces, if necessary) and basil leaves between the skewers.
  5. Serve while the gnocchi is still warm.
