The Overnight Weetbix trend is in full swing, and thanks to the Healthy Mummy there’s another new recipe to add to your Overnight Weetbix repertoire!

This recipe uses Key limes, which are a slightly sweeter Mexican lime variety. You can use regular Tahitian or Persian limes for this recipe and it will taste just as good.

  • 2 weetbix
  • 1/4 cup milk of choice
  • 100g yopro vanilla yoghurt
  • 2 tsp light cream cheese
  • 2 tsp lime juice
  • 1 tsp lime zest

Instructions
  1. Crush weetbix into a container, add milk and stir well. Pat the weetbix mixture down firmly to create the base.
  2. In a separate bowl combine the yoghurt, cream cheese, lime juice and half of the zest then pour into your container to cover the weetbix.
  3. Sprinkle the remaining lime zest on top of the yoghurt mixture.
  4. Set in the fridge or consume immediately.
