  • 1/2 cup almond meal
  • 1/2 cup rolled oats
  • 1/2 cup desiccated coconut + 2 tbsp for rolling
  • 1 tbsp fresh lemon juice
  • 2 tbsp honey
  • 1 tsp vanilla extract

Instructions
  1. Blitz almond meal, oats and 1/2 cup coconut.
  2. Add lemon juice, honey and vanilla extract and blitz again until well combined.
  3. Roll into 10 balls then coat in the 2 tbsp coconut.
  4. Place in the fridge to firm up.
  5. Can be stored in the fridge in an airtight container.
