  • 1/4 cup unsalted cashews
  • 3 tbsp desiccated coconut plus 1for rolling
  • 2 tbsp rice malt syrup
  • 1/4 tsp vanilla extract

  1. Blitz ingredients all together (except the extra coconut), until they break down and stick together.
  2. Roll into balls, roll in coconut and place in the fridge or freezer to set.
  3. Can be stored in the fridge or freezer in an airtight container.
