Ingredients
- 2 Medium avocado, deseeded (240 grams)
- 1.5 tbsp Lemon juice (30 mls)
- 1 Tinned mixed beans, rinsed & drained (400 grams)
- 2 tsp Taco seasoning, salt reduced (2 grams)
- 3/4 cup extra light sour cream (200 grams)
- 1 Lebanese cucumber, chopped (200 grams)
- 1 Tomato, chopped (100 grams)
- 1/2 cup Corn kernels, fresh or tinned, drained (80 grams)
- 1/2 Red onion, thinly sliced (50 grams)
- 2 tbsp Coriander fresh parsley, chopped (10 grams)
- 1/4 cup Optional jalapeno chillies, sliced (48.01 grams)
- 1/3 cup Optional reduced-fat cheddar cheese, grated (50 grams)
- 1 Packet of plain corn chips (175 grams)
- 1 Lime, sliced (80 grams)

Instructions
- In a small bowl, mash 1 ½ avocados and 1 tablespoon of lemon juice, together, then set aside.
- Chop the remaining avocado, squeeze remaining lemon juice over the top to avoid browning and set aside.
- Place the prepared beans in a bowl, reserving approximately ¼ cup for garnishing, and mash with a fork, combining with the taco seasoning, then set aside.
- Cut baking paper to cover 80% of the serving board. Spread the board evenly with the 3 dips- avocado, beans and sour cream, in separate horizontal lines.
- Top the dip trio with cucumber, tomato, reserved beans and avocado, corn, onion, fresh herbs, jalapenos and cheese.
- Serve with corn chips or toasted wholegrain wraps on the edges of the board and garnish with lime slices. Enjoy!!
