  • 1 cup rolled oats
  • 1 tbsp buckwheat
  • 1 tbsp pepitas
  • 1 tbsp coconut flour
  • 1 tbsp honey
  • 1/4 cup almond milk
  • 1 tbsp coconut oil melted
  • 50 g pitted dates

  • 1 cup rolled oats
  • 1 tbsp buckwheat

Instructions
Thermomix
  1. Place dates and coconut oil in Thermomix with 60 ml water
  2. Time 2:30 min – Temp Varoma – Speed 5
  3. Once finished blitz speed 6 for 5 seconds until paste forms
  4. Transfer into mixing bowl and mix with remaining ingredients until combined (or can do this in Thermomix on reverse speed 4 – 5 sec)
  5. Press into silicon mounds (a mini muffin tray is ideal)
  6. Bake in pre-heated 180C oven for 5-10 minutes or until golden
  7. Remove from silicon moulds while warm
  8. Allow to cool before storing in air tight container
Food Processor
  1. Soak dates in boiling water for 5-10 minutes until soft
  2. Drain dates well, and then blitz dates, coconut oil & honey in food processor until paste forms
  3. Transfer into bowl and mix with remaining ingredients until combined
  4. Press into silicon mounds (a mini muffin tray works well)
  5. Bake in pre-heated 180C oven for 5-10 minutes or until golden
  6. Remove from silicon moulds while warm
  7. Allow to cool before storing in air tight container
