Neapolitan Bars For A Kid-Friendly Christmas Dessert

Want to try something special to wow the little ones for dessert over Christmas? Many kids aren’t too keen on traditional Christmas desserts such as trifle or pavlova – but they nearly all love ice cream!

This recipe tastes just like old-school neapolitan ice cream, only it’s MUCH healthier (shhhh, don’t tell them). A chewy chocolate base with two creamy strawberry and vanilla layers – the little ones will love it.  The kids can even help make this one too, because it is completely no-bake.

The best part is you can make it in advance and then just pull it out when you are ready to tuck in.

Base
  • 4 weetbix
  • 2 tbsp cacao
  • 1 tbsp honey
  • 1 tbsp coconut oil
  • 4 tbsp water to bind the mix use more or less as needed
Vanilla layer
  • 250 g light smooth ricotta
  • 2 tbsp natural greek yoghurt
  • 1 tbsp honey
  • 1 tsp vanilla extract
Strawberry layer
  • 250 g light smooth ricotta
  • 2 tbsp light cream cheese
  • 1 tsp honey
  • 8 fresh strawberries
  • 1 tbsp Strawberry Healthy Mummy Smoothie mix optional

Instructions
  1. Line a loaf pan with baking paper.
  2. Mix all the base ingredients together first in a bowl except the water, once all combined slowly add the water 1 tbsp at a time, just enough to bind it together.
  3. Once well mixed pour it in the bottom of the pan, firmly press down in place and pop in the fridge.
  4. Next mix all the vanilla ingredients together in a food processor until well combined, then pour over the base mix and pop in the freezer.
  5. Mix all the strawberry layer ingredients together in a food processor, put in a bowl, cover and place in the fridge while the vanilla layer freezes.
  6. You do not want to pour the strawberry layer mix over the vanilla mix just yet, if you do you won't get the definition of the two separate layers, you want the vanilla layer to half set before you pour over the strawberry layer.
  7. Once the vanilla layer has partially set in the freezer, pour over the strawberry layer and set in the freezer.
  8. You can either eat frozen or defrost for 15 minutes prior to eating.
  9. Cut into 8 slices to serve.
