Savoury beef mince with sweet potato mash

- 1 large sweet potato peeled and diced
- 1 tbsp olive oil
- 500 grams lean beef mince
- 1 tsp crushed garlic
- 1 carrot grated
- 1 zucchini grated
- 400 grams tinned crushed tomatoes
- 1 cup frozen peas
- Salt and pepper
- 1 head broccoli cut into small florets
Ingredients

- Bring a large pot of water to the boil.
- Carefully add the sweet potato and boil for 15 minutes or until soft.
- Drain sweet potato and return to pot, season with salt and pepper. Add 2 tbsp water and mash until smooth.
- Heat olive oil in large frypan on high heat.
- Add beef mince and garlic to the pan, season well and sauté until browned.
- Add grated vegetables, tinned tomatoes and peas to pan.
- Simmer for 10 minutes. Steam the broccoli in the microwave or on the stovetop.
- Serve the mince with mashed sweet potato and steamed broccoli.
- Store in an airtight container in refrigerator for 4 days or freeze for up to 3 months.
