  • 2 tbsp coconut oil melted
  • 2 tbsp pure maple syrup
  • 1/2 tsp vanilla extract
  • 1 cup rolled oats
  • 1/4 cup pepitas
  • 1/3 cup 100% peanut butter

Instructions
  1. Line a loaf pan or tray with baking paper and set aside.
  2. Mix peanut butter, coconut oil, maple syrup and vanilla until well combined.
  3. Add oats and pepitas and mix again until well combined.
  4. Press firmly into prepared pan and pop in the freezer to set.
  5. Can be kept in the fridge or freezer.
