Here’s a healthy Asian style soup that you can have on the table in just 15 minutes. A refreshing and hydrating soup, this is a great way to help cleanse your system while still filling you up.
Use the noodles of your choice if you can’t find soba – zucchini noodles would work well, or the kids might even like it with spaghetti instead.

Instructions
Rinse and drain cannellini beans.
Heat sesame oil in a saucepan over medium-high. Add ginger and garlic and sauté for 1 minute. Add bok choy and cannellini beans and stir together for another minute.
Add the vegetable stock and soba noodles and bring to the boil. Reduce to a simmer for 5 minutes or until noodles are heated through.
Pour into a bowl and sprinkle with sesame seeds to serve.
