  • 1/4 cup cashews
  • 2 tbsp pepitas
  • 2 tbsp buckwheat
  • 3/4 cup dates (best if soaked in boiling water for 15 minutes then drained
  • 1 tbsp chia seeds
  • 1 tbsp dried cranberries
  • 1/2 tsp cinnamon
  • 1/2 tsp ginger
  • 1 tbsp coconut oil liquified

Instructions
  1. Lightly blitz cashews, pepitas and buckwheat and set aside.
  2. Blitz soaked dates
  3. Add nut mixture to date mixture and all remaining ingredients then blitz until combined.
  4. The mixture will be quite sticky so i suggest popping it in the freezer for about 10 minutes prior to rolling into balls or pressing into small silicon moulds.
  5. Once rolled or pressed into moulds, pop in fridge or freezer to set.
  6. Can be stored in fridge or freezer.
  7. Enjoy
