Spiced Roast Pumpkin, Chorizo & Lentil Tagine
My goodness our Healthy Mummy members are so creative! Here is an amazing concoction from Cassandra Wight. At only 270 calories per serve, you can enjoy the tasty flavour combination of pumpkin and chorizo with no guilt whatsoever!

Ingredients
- 500 g diced pumpkin
- 60 g dried lentils cook per packet instructions first
- 1 tin diced tomatoes
- 1 tbsp coconut oil
- 1 tsp smoked paprika
- 1 tsp cumin
- 1 tsp ground coriander
- 1 sprig spring onion
- 50 g chorizo sliced I buy it pre-sliced
- 1 tsp Minced Garlic
- 1/2 tsp Minced Ginger
- 1/2-1 tsp ground chilli
- 1 tbsp finely grated Parmesan

Instructions
- Toss cubed pumpkin in garlic & coconut oil roast in oven until tender
- In large pot crisp up the chorizo (don't add any extra oil)
- Add the pre cooked lentils, diced tomatoes, spices, ginger & garlic simmer on low heat for 5 minutes
- Gently mix in roasted pumpkin and simmer for a further 2 minutes
- Sprinkle some fresh chopped spring onions on top and some finely grated Parmesan
