Bring the steak to room temperature before cooking.
Season with salt and pepper.
Heat oil in a frypan over medium-high heat and add steak. Cook for 4-5 minutes each side or until cooked to your liking. Can also be cooked on a preheated barbecue plate. Once steak is cooked, remove from heat and set aside to rest.
Prepare the salad by draining the beetroots and chopping in half.
Place rocket on a serving bowl and top with beetroot, crumbled feta and walnuts. Drizzle with balsamic.
Once steak has rested, slice and place on top of salad to serve.
