Delicious sugar-free peanut butter cookies
These generously-sized sugar-free cookies will melt in your mouth, but are only 144 calories each! They are our new favourite cookie recipe, and can be enjoyed as part of your healthy eating plan, even if you’re on the 28 Day Weight Loss Challenge.
Be sure to use sugar-free chocolate, or choose good quality dark chocolate.

Ingredients
- 1 cup wholemeal plain flour
- 1/2 cup natural peanut butter look for one that has 100% peanuts on the label
- 1/4 cup honey
- 1 egg
- 1.5 tsp baking powder
- 1 tsp natural vanilla extract
- pinch of salt
- 1/4 cup chocolate chips optional, for decoration

Instructions
- Preheat the oven to 180C
- Place all ingredients (except chocolate chips) into a food processor or blender and process on low until combined
- Scoop out tablespoon sized dollops of batter and roll into balls
- Place balls onto a baking paper lined baking tray and flatten with the back of a spoon
- Top with chocolate chips
- Place in the oven for 10-15 minutes or until starting to turn golden

You might need to make a double quantity. Either that or hide them from the kids!
