  • 1/2 cup sweet potato grated
  • 1 tsp olive oil
  • 1/4 tsp garlic powder
  • 4 eggs
  • 1 tbsp fresh chives
  • Olive oil spray
  • Pinch of salt and pepper

  • 1/2 cup sweet potato grated
  • 1 tsp olive oil
  • 1/4 tsp garlic powder
  • 4 eggs
  • 1 tbsp fresh chives
  • Olive oil spray

Sweet Potato and Egg Brekki Bites
Instructions
  1. Preheat oven to 180c.
  2. Peel and grate sweet potato. Squeeze out any excess moisture.
  3. Combine sweet potato, olive oil and garlic powder and mix well.
  4. Spray muffin moulds with olive oil spray to prevent sticking. Evenly spoon sweet potato mixture in the base of muffin moulds, pressing mixture in firmly and evenly.
  5. Place in the oven to cook for 10 minutes.
  6. Remove from oven and crack one egg into muffin moulds on top of sweet potato mixture.
  7. Sprinkle with salt and pepper and bake for 13-15 minutes or until egg is cooked to your liking.
