Thermomix warm Mexican quinoa salad
Here’s a delicious meal idea that can be made in a flash in your Thermomix. Perfect for a hot or cold lunch or dinner, this colourful Mexican-inspired quinoa salad recipe is packed with fresh flavours – and is so good for you.
If you haven’t already tried protein packed quinoa, it’s a great alternative to rice, pasta or cous cous. We use it regularly in our recipes on the 28 Day Weight Loss Challenge.

- ¾ cup quinoa uncooked
- 1 small red onion peeled and very finely sliced
- 1 clove garlic very finely chopped
- 1 lemon zested and juiced
- 1/4 cup fresh parsley stems and leaves finely chopped
- 1/4 cup fresh coriander stems and leaves finely chopped
- 1/2 cup corn tinned
- 1 avocado peeled and cubed
- 400 g tin of black beans drained and rinsed, or use kidney beans
- ½ tsp each of cumin, coriander, and oregano
- 1 tbsp olive oil
- Salt and pepper to taste
- 1/2 lime cut into wedges to serve

- Blitz onion, garlic, parsley and coriander on speed 8 for 10 sec, take out and set aside.
- Rinse the quinoa under warm running water using a fine sieve and transfer into the rice basket.
- Put about 800g water into the Thermo, add the rice basket (and if you’re cooking veggies or chicken for lunch tomorrow, load the Varoma on top).
- Cook on Varoma temp, speed 4 for 20 mins.
- Prepare the rest of the ingredients by placing everything in a bowl, then add the quinoa when cooked, and mix everything well.
- Season to taste and serve with lime wedges on the side.
