- 185 grams tinned tuna
- 3 tbsp fresh lemon juice
- 1/3 cup peas
- 1/2 Onion diced
- 1 slice wholemeal bread processed into crumbs
- 2 eggs whisked
- 3 tbsp Parmesan cheese
- Salt and pepper to taste
- 2 tbsp olive oil
Ingredients

- Drain tuna well and break up with a fork.
- Add lemon juice, peas, onion, and breadcrumbs. Mix well.
- Add the eggs, parmesan, salt and pepper and mix to combine.
- Form into 6 patties and squeeze out any excess liquid.
- Heat the oil in a frying pan over medium heat.
- Pan fry the patties on each side until golden.
- Cool on absorbent paper.
