4 Ingredient Healthy Coconut Ice

Do you remember enjoying Coconut Ice as a kid? It always seemed to be on the cake stall at the school fete.

Unlike the traditional recipe that calls for copious amounts of icing sugar and condensed milk, this Healthy Coconut Ice is made with coconut and raspberries, and is sweetened with honey.

  • 2 cups shredded coconut
  • 2 tablespoons honey
  • 1/4 teaspoon vanilla extract
Top
  • 1.5 cups shredded coconut
  • 1 tablespoon honey
  • 1/2 cup frozen raspberries
  • 1/4 teaspoon vanilla extract

  • 1.5 cups shredded coconut
  • 1 tablespoon honey
  • 1/2 cup frozen raspberries
  • 1/4 teaspoon vanilla extract

Instructions
Base
  1. Line a loaf pan or small tray with baking paper and set aside.
  2. Blitz coconut until broken down and starting to release oil (approx. 1 minute).
  3. Add honey and vanilla then blitz again until well combined.
  4. Press firmly and evenly into tray and set aside on bench ready for the top layer.
Top
  1. Blitz coconut until broken down and starting to release oil (approx. 1 minute).
  2. Add raspberries, honey and vanilla and blitz again until combined.
  3. Spoon mixture evenly over the base and pop into the fridge to set.
  4. Once set, cut into 12 pieces.
  5. Store in the fridge or freezer.
