  • 1 cup roasted cashews
  • 1/4 cup shredded coconut
  • 1 tbsp coconut oil melted
  • 50 g pitted dates
  • 100 ml boiling water
  • 2 tbsp desiccated coconut for rolling in

Instructions
  1. Soak dates in boiling water for 10 minutes.
  2. Place the soaked dates into the food processor with all remaining ingredients.
  3. Blitz on high until combined, adding a little more water if needed.
  4. Roll into 20g balls and coat each ball in desiccated coconut.
  5. Keep refrigerated up to 1 week or freeze for up to 3 months.
