- 1 cup roasted cashews
- 1/4 cup shredded coconut
- 1 tbsp coconut oil melted
- 50 g pitted dates
- 100 ml boiling water
- 2 tbsp desiccated coconut for rolling in
Ingredients

- Soak dates in boiling water for 10 minutes.
- Place the soaked dates into the food processor with all remaining ingredients.
- Blitz on high until combined, adding a little more water if needed.
- Roll into 20g balls and coat each ball in desiccated coconut.
- Keep refrigerated up to 1 week or freeze for up to 3 months.
