  • 3/4 cup dried apricots
  • 1/2 cup desiccated coconut
  • 1/2 cup wholemeal self raising flour
  • 1 egg whisked
  • 1 teaspoon vanilla extract
  • 1 tablespoon pure maple syrup
  • 1 tablespoon water

Instructions
  1. Preheat oven to 180C.
  2. Line a tray with baking paper and set aside.
  3. Blitz apricots until broken down and they form a sticky mixture.
  4. Add remaining ingredients and blitz until combined.
  5. Place tablespoons of mixture onto tray and cook in the oven for 12 minutes, or until golden.
  6. Place cookies on a cooling rack to cool then store in an airtight container.
